одна система на машине и всегда была одна, лет семь назад винду снес и поставил минт. Пару раз переставлял с нуля. Два диска дополнительных новые ставил,

как я ответил выше, на оба дополнительных диска отключено монтирование в fstab, и сам с отключенными дисками fstab есть выше, и если физически отключить этот диск, то система перестает грузиться
Вопрос про зависания, а не про систему сейчас

max, запустить телегу из терминала и при зависании может быть чего видно будет

телега ваще не показатель как посмотрю...
чудит она по полной, репортов на баги им пихают нынче по полной - как вывод проблема в телеге, а не в файловых операциях...
у меня она на видосиках вылетает, причём началось это с последней обновой...
странно что у тебя ничего в терминал не сыпит по ошибкам, у меня там полный ворох...

Это система часть файловых систем отмонтировать не может во время соответствующего этапа. По причине отсутствия - то что выше по иерархии уже остановлено. Т.к. это RO образ базовой (начальной) системы, и виртуальная FS с датчиками/переменными ядра - пофиг в общем-то.

(где sdX - подозреваемый диск)
И еще имеет смысл смотреть журнал системы после попытки такой записи -journalctl -b
Есть хороший шанс обнаружить источник, если проблема чисто программная.

Диску который обозначен как sdc - WD7502AAEX-00Y9A0 весьма нездорово...
Однозначный диагноз поставить нельзя (с такими симптомами/показателями несколько вариантов подходят), но что он нездоров - 100%. Менять нужно, и чем быстрее - тем лучше. Очень возможно, что идет активное разрушение технической информации (маркеры дорожек, прошивка), может перестать включаться в любой момент. Но может проработать (с глюками) еще некоторое время. В домашних условиях лечению не подлежит, в сервисе - скорее всего тоже, или будет дорого (нерентабельно).
Такие проблемы у диска как раз могут давать "подвисания" при обращении к нему, при видимой сохранности информации (до поры).
